I think this is a really good idea. Perhaps it could be handled by adding the ability to create "Select Fields" templates for "Entry Manager" in Machform. These templates would be associated with the form, not a specific user, and could be chosen and managed when clicking on the "Select Fields" button on the "Entry Manager" for that form. When you create a "Select Fields" template, you choose which fields should be displayed and save your selection with a name that will appear in a drop-down menu. (Being able to re-order the fields as well would be a really nice bonus!) Once the template is save, it could be chosen by any other user of the form which would change the "Entry Manager" display to reflect the column selection (and order, if that feature is added) to match what was defined in the template.
An additional option that I would like to see is the ability to designate a "Select Fields" template as global or local when you create it. This attribute should be editable, so a local template can be made global later, or vice versa. This would allow Machform users to experiment with this feature without cluttering up the "Select Fields" template menu with a lot of unnecessary items.
